Beneath a caramelised puff pastry with hints of toasted vanilla sugar, reminiscent of a palmier biscuit, lies a creamy flan filling with an intense vanilla flavour, enriched with a centre of vanilla caviar. The whole is set on a bed of crumbled puff pastry, to prolong the crispness and enhance the texture.
