To celebrate the back-to-school season, Chef François Perret is adding a new trompe-l’œil to his collection: the Pistachio Eclair Dessert. A delicate choux pastry biscuit encloses an airy pistachio mousse, enhanced by a creamy filling and topped with a white chocolate shell decorated with a ruler.
